another food post?
Another food post? So soon? Why yes. Because I love me some bacon and spinach. Tonight we made one of my faves. Very simple. Probably not the healthiest of salads (ok, definitely not). But I needed something delicious to cure myself of my “work sucks” blues.
So to make the dressing, you first cook 5 pieces of bacon and chop up into tiny bits. Then combine 3/4 cup sugar, 1 1/2 teaspoons corn starch, and 1/4 teaspoon salt. In another bowl, combine 2 tablespoons water with 1/4 cup white vinegar. Slowly poor the liquid into the dry mixture while whisking. In the skillet you’ve cooked the bacon in, after you’ve drained away all the fat, poor your sugar/vinegar mixture into it and cook over medium low heat until mixture thickens. For the salad, I use a bag of spinach, some hard boiled eggs, and green onions. Combine with dressing and voila, a delicious creation.
So in another news, another lady blog I read posted about songs and how they remind the author of certain times in her life. I thought it might be fun to reflect on the same – it really is bizarre (and cool) how songs can make you think of exactly where you were at a certain point in your life.
- “Runaway Train” by Soul Asylum – this is one of the first songs I remember being really into when I was first getting into music in the 3rd grade. I used to wait by the radio and my bookbox (yes, I just said boombox) until a song I liked would come on then I would really, really quickly hit record so I’d have the song on a blank tape. I loved that song. And the Michael Jackson song from Free Willy.
- “Inevitable” by Shakira – my first boyfriend broke up with me in the 9th grade, and my little 14 year old self was devastated. I played this song over and over again in my dark, candlelit room after he dumped me, and thought I was super cool for understanding breakup songs in Spanish.
- “Thong Song” by Sisqo – high school tennis. My best friend Alison and I loved this song. Well, she loved it. I pretended to love it because I was pretending to love “cool” music.
- “Don’t Panic” by Coldplay – my senior year in college, everyone was really into the Garden State soundtrack. This song reminds me of champagne breakfast at Delta Chi during my last couple of months in college.
- “No One” by Alicia Keys – I don’t quite understand the association, but this song reminds me of right after my mom died. I guess it’s because it was on the radio a lot at the time. Matt and I had only been dating for a couple of months at the time, and I remember feeling so devastated yet hopeful (for Matt and I) at the same time. It’s about needing someone – and I guess it reminds me of both my mom and Matt although in entirely different ways.
- “Phantom Limb” by The Shins – this song represents the summer inbetween my first and second years in grad school. That was such an amazing summer – Matt and I finally started dating, I had a great internship and job, great times with friends by the pool, and the most clear memories I have of my mom. Definitely the best summer I’ve had thus far, and this song always makes me think of sunshine.
