first try = yummy success
So I’ve never made a lasagna. I love lasagna, but it always seemed like a lot of work, so I never tried. I had some time yesterday, so I decided to knock one out. It was surprisingly easy, and turned out oh so yummy. Maybe also healthy due to all the spinach? (keep telling yourself that, Anna)
I won’t win any awards for my photo journalism. But, it really is good. The recipe in case you’d like to try it:
Spinach & Prosciutto Lasagna
- 20 oz frozen chopped spinach, thawed and squeezed dry
- 1 1/2 cups part-skim ricotta
- 1 garlic clove, minced
- Salt and pepper
- 2 1/2 cups tomato sauce
- 4 oz thinly sliced prosciutto, finely chopped
- 6 no-boil lasagna noodles
- 1 cup shredded part-skim mozzarella
Preheat oven to 375. Make filling by stirring together spinach, ricotta, garlic, 1/4 tsp. salt and 1/4 tsp. pepper. In another boal, stir together the tomato sauce and prosciutto. In an 8 inch square baking dish, spread 1/4 c. tomato sauce on the bottom of the dish. Layer 2 noodles, 1/3 of the filling, and 1/3 of the remaining tomato sauce. Repeat twice. Top with mozzarella and bake until browned (about 35-40 minutes). Voila!
