Yes, that is the name of the soup I made for dinner last night. Doesn’t the name just make you happy? The soup will make you happy too.
You can find the recipe from Cooking Light here. Albondigas means “meatballs” in Spanish, and these have a hidden rainbow because there’s a ton of veggies but you don’t really know they’re there. The recipe calls for pork – I used ground turkey and I thought they were great. I also used zucchini instead of yellow squash – couldn’t tell a difference.
Matt formed the meatballs for me. I hate forming meatballs. He likes it, contrary to what this picture tells you.
